I am still trying to find uses for the very many grapefruits on our tree. I recently came across a recipe for a granita that was made with mandarin juice, so I thought I would try to make it instead with grapefruit juice.
First make the sugar syrup. I used a ratio of 2 cups of sugar to 1 cup of water. Mix the sugar and water in a small saucepan and heat until sugar is dissolved then set aside to cool. To make the granita, take 4 cups of grapefruit juice, and add 1 cup of sugar syrup. Pour into a shallow tray and place in the freezer. When you see ice crystals beginning to form around the edges of the container, stir the mixture with a fork. Stir every 1/2 hour for about 3 hours. If it gets too hard to stir, simply leave at room temperature to melt a little. When ready to serve, spoon a generous amount into a martini glass. Top up with vodka (or gin) and enjoy!! You could also try with a sparkling wine or sparkling mineral water if you would prefer a mocktail.
